I’m currently obsessed with kale. I had it as a raw salad for the first time a couple of week’s ago, and was determined to duplicate the recipe at home. Chopped Kale Salad Ingredients Large Bunch Kale about 14 cups with stems removed 1/4 cup currants 1/2 cup raw shelled pumpkin seeds 1/4 cup grated Parmeson or Manchego cheese (optional) Juice of 1 Lemon 3 tbs Olive Oil (or to taste) Salt to taste Directions Fill your food processor with the kale leaves, in batches if necessary. Pulse until the kale is pretty finely chopped (or until desired consistency). Transfer to a medium bowl. Put the pumpkin seeds in the processor and pulse until finely chopped. Add those to the kale, along with the currants and cheese. Toss to combine. Add the juice of one lemon, the olive oil, salt. Stir. Serve immediately or store in the refrigerator. Yield: serves 4 Notes: This recipe is raw, paleo/primal friendly, dairy optional. Feel free to scale up or down the ingredients to your taste!!
