I’ve had a lot of requests for recipes that I post on Instagram during my weekly cooking. Some of them are made up, some are loosely based on recipes, and some are from my favorite paleo bloggers/cookbooks. Some are even mash-ups of several recipes. I cook in my own kitchen for 4 people a week: myself and my husband and two clients I have who also like to eat paleo. Monday and Wednesday I have a more personal chef type gig where I cook at my client’s house. You may have seen those meals as #dinnerforjoe on Instagram. Those meals aren’t usually planned in advance as I like to see what seafood looks good that day. So for now, we’ll stick to the meals I plan here at home for us.

I’m going to try to put up a post every week of what recipes I’m planning to make here (I do most of my cooking on Sunday, Monday, and Tuesday) for the week, and relevant links/sites. All of the recipes will be centered around paleo eating, although I may include some cheese occasionally.

I really, really, really want to keep this up – so pester me if I slip up, ok?

This week, I’m going to give these a go:

Pad Thai – probably will use the Sunshine Sauce from Melissa at The Clothes Make The Girl, maybe the egg part of her recipe, except I’ll use either broccoli slaw or julienned yellow squash instead of spaghetti squash. Other references here and here. I’ll probably use chicken as the protein.

Lasagna Spaghetti Squash – I’m going to use this base recipe from Tasteful Pantry, except try some sort of cashew ricotta (I have some cashew cream leftover from a dip I made last week) instead of real dairy cheese. I’ll probably use beef and/or Italian sausage instead of turkey, and I may include some mozzarella for optional sprinkling.

Unstuffed Grape Leaves (Dolmados) – I’ve been asked to paleo-fy this yummy combo of grape leaves, rice, and ground meat. So I’ll be referencing this recipe, except using cauliflower as a stand in for rice and using a lamb/beef combo.
