Whole Life Challenge Recipe: Mint Chocolate Larabars May 28, 2014 Recipes 6 Comments 13461 Chocolate. Mmmm. Unfortunately even high quality dark chocolate has sugar and usually soy lecithin in it, making it off limits for the Whole Life Challenge. So when I need a chocolate fix, I have to keep these guys on hand. 1 cup almonds (150g) 1 cup cashew pieces (150g) 1/2 tsp coarse grey salt roughly 25-30 small dates or 175g 2 tsp vanilla extract 4 tbs unsweetened cocoa powder (or to taste, I like it very chocolatey) 1 tsp peppermint extract (or fresh mint to taste!) Start with the nuts and salt in the food processor and buzz until well combined and chopped. Add in the dates, vanilla, cocoa powder and peppermint and pulse until a coarse dough forms and it holds together. You may need to add more dates to get the right texture. Press into a wax/parchment lined 8×8″ baking dish and freeze to set. Cut into bars, squares, or whatever shape you like! 6 Responses Julie June 1, 2014 What kind of food processor do you use? The BEST kitchen purchase I’ve ever made. I would suggest to Vitamix users grinding the nuts then removing them from the canister and chopping the dates separately.
