I thought I would share my meal plan for the week on Wednesdays. I know it’s weird, but that way if I share anything you like, you can incorporate it into your meals for the following week. I mean that’s what I do when I see something online that I like. Make sense?

I often like to prepare a couple of side dish items to pair with proteins throughout the week or make a base for a light lunch. You’ll notice I’m not currently in participating in any sort of “diet.” I’m just trying to keep a balance of macros (carbs, fat, protein) and eat a lot of vegetables. Here’s what I’ve got going on this week:

  • My favorite Kale Salad (I leave out the beans now, I don’t need them with the volume of this I eat)
  • Lemon Garlic Orzo Salad (Except I use quinoa, I use more nutritionally dense grains when it’s an easy swap)
  • Beef Enchiladas (Method loosely based on this or this). I often shortcut by using a taco seasoning mix on my meat.
  • Light Mac and Cheese (I love watching The Chew, but have never made anything from the show – yet. This recipe is one of their most downloaded.)
  • Salmon and Shrimp to pair with various salads
