In this house, we LOVE coffee. I’m talking the drink it from sun up to sun down variety of coffee loving – not just reserved for a morning jolt. In fact, one of the saddest times of my life was during the first half of my pregnancy where I didn’t want it at all – even decaf. I was so relieved when my love for coffee returned!

Now as a new mom, coffee has become even more important to me. It’s like a little escape from the challenges of motherhood when I sit down during a nap and enjoy a cup. I’m the type of coffee drinker that drinks it after it’s gone to lukewarm, then cold. It doesn’t matter to me, I just love it.

We have been fans of the original Eight O’Clock for many years, ever since my step-dad told us it consistently makes the list of top grocery store coffees in taste and value. He’s the type of guy that geeks out on reviews and loves to comparison shop 🙂

So when I heard about Eight O’Clock Coffee Infusions, I had to try them!

Of course I was immediately drawn to the Spice version – spiked with cinnamon and turmeric. I brewed up a cup and could definitely smell the spicy additions. The flavor was subtle, but yummy. I could see myself enjoying this over the holidays this year and pretty much all.fall.long. Pumpkin spice lovers…this one’s for you. It would be perfect in a dessert recipe that calls for brewed coffee like a tiramisu.

Immediately following my first cup, I broke out the decaf because I still wanted more coffee. The Relax decaf blend is infused with chamomile and lavender. I love both of those things, and they are well known to induce relaxation! So I brewed up a cup and gave it a sip (with cream of course, because that’s how I take my coffee). It was really smooth, which was refreshing in a world where so much decaf is just plain bitter and gross (trust me, I know because I drink a lot of it). I tasted a hint of lavender first, then the chamomile on the finish for sure. If you’ve ever wanted to relax in the evening with some chamomile tea but you’re also into coffee….this cup is for you. It’s almost like a tea-coffee hybrid, which works – I promise. Even the grounds are beautiful, you can see the herbal additions 🙂

One of my favorite ways to enjoy coffee is part of a post workout smoothie. I thought the B6 Metabolism infusion would be perfect for this, but you could also grab the Hi Alert if you need a pick me up. Here’s how I blend it up:

This makes a huge amount, so feel free to half it.

  • 1 cup milk/non dairy milk
  • 1 cup brewed Eight O’Clock B6 Metabolism infusion coffee
  • 1 cup ice
  • 1 scoop chocolate protein powder
  • 1 ripe banana
  • pinch salt

Optional add ins: stevia or extra natural sweetener like honey, yogurt, extra cocoa powder, peanut butter/peanut butter powder, cinnamon.

If your coffee is hot, just put everything in the blender with the ice on top then pour the coffee over it. Give it a whizz until smooth and enjoy!

I still need to try out the other infusions, but so far I’ve been really pleased! I’m always looking for ways to make my coffee more interesting at home (versus going out), and these do the trick.
